The Sriracha brings a touch of spicy heat to the salmon, while the lime juice adds a bright citrus note. When you mix those 2 ingredients with a little luscious butter, and it all cooks at a high heat for a short amount of time, you have one amazing, unique meal.
The original recipe is from Gwyneth Paltrow, but the blog that I pulled it from (So Tasty, So Yummy) took out the sweet component of maple syrup and the herb component of cilantro, because she prefers her seafood to be spicy and not sweet (I am usually in agreement).
The crispy snow peas are so simple to make, and they serve as a healthy, perfect side to the salmon. We added a freshly baked roll and called it a pretty darn good night.
Bon Appetit, my friends!

Ingredients:
2 salmon filets
juice of 1 small lime
1 T. sriracha (adjust to your taste)
2 T. butter, melted
1 lb. fresh snow peas
2 garlic cloves, minced
2 T. low sodium soy sauce
1/4 tsp. crushed red pepper flakes
olive oil
S & P
The Process:
Get ready to see how simple these recipes are.
Preheat the oven to 475 degrees. Melt the butter in a small dish and set aside. Stir the lime juice and the Sriracha into the butter to incorporate.
Add a drizzle of olive oil to a baking dish lined with foil. Place the salmon, skin side down, in the dish. Add S & P to the top of each filet.
Brush the butter-Sriracha-lime juice mixture onto each piece of salmon. Place in the pre-heated oven, and cook, uncovered, for 15-18 minutes. We found 15 minutes was perfect.
When you have about 5 minutes left of cooking time, warm a pan with about 1 T. olive oil. When the oil is hot, add in the minced garlic, and brown it up, being careful not to burn it (stir frequently). Add in the snow peas, and toss them around with the garlic and olive oil. Add in the soy sauce, and toss to coat. When ready to serve, toss in the crushed red pepper flakes.
Again, I really cannot express how SIMPLE, FLAVORFUL, and NOURISHING these recipes are. They will be bookmarked on this blog - and in my brain - forever!
