One of my favorite things to do is pick up a protein at the store and then do a quick internet search (or cookbook search) for a recipe involving that protein and a few other simple ingredients. Last weekend hubby and I picked up a couple of flounder filets, and I quickly found a recipe for the flounder involving baking it with butter, Panko bread crumbs, and Parmesan. Sounds delicious, right? It was quite delicious.
I had the butter, Panko, and Parmesan at the house - even better.
So, here is a super easy, satisfying, flavorful recipe for you to enjoy. Feel free to substitute any other white flaky fish for the flounder if desired. We paired the flounder with baked fries and a kale salad, for a spin on Fish 'n' Chips.
Enjoy!
Baked Flounder with Panko and Parmesan
Source: www.allrecipes.com
Ingredients:
2 boneless flounder filets
2-3 T. butter, melted
1/2 cup Panko bread crumbs
1/4 cup fresh Parmesan cheese (grated)
1 pinch dried thyme
S & P
*optional - fresh parsley and a wedge of lemon for garnish
The Process:
Preheat your oven to 400 degrees. Line a shallow baking dish with foil and spray with non-stick cooking spray. Place the flounder filets, skin side down, on the foil and season with S & P (just a touch).
Brush a little of the warmed butter on the filets. Next, mix the remaining butter with the Panko bread crumbs, thyme, and Parmesan cheese. Add a little S & P to this mixture. Add the mixture to each filet, pressing the yumminess into the filets a bit.
Bake in the oven for about 15-20 minutes, depending on the thickness of your filets. I turned on the broiler for the last minute or so to brown up the top a bit.
Carefully transfer the flounder filets to your serving plates, and enjoy this simple, fancy, fabulous dinner!
