I have wanted to try this yummy idea for awhile. Substituting avocado for mayo sounded like a fabulous idea in my book. I had some time this morning while my Seashell was napping and a load of clean baby clothes were happily bouncing around in the dryer, so I wanted to make this sandwich. I had all the ingredients on hand (even better). It took about 5 minutes to make, and it was a super yummy, protein-packed, healthy sandwich, full of bright colors and textures.
This recipe makes enough for 2 big sandwiches or 3 smaller sandwiches. You could also serve this as a tasty topper on a bed of dark leafy greens for an even healthier lunch. You will need to eat this egg salad right away because the avocado will start to turn brown in the refrigerator if you try and save it.
Enjoy!
Avocado Egg Salad Sandwiches on Whole Wheat Buns
Source: my own (although substituting avocado for mayo is a common idea for egg salad)
Ingredients:
whole wheat buns
1 ripe avocado, pitted, chopped, and then lightly mashed
2 hard-boiled eggs, roughly chopped into bite-sized pieces
2 dill pickle spears, roughly chopped into bite-sized pieces
2 slices of muenster cheese (or any cheese you like)
1 tablespoon of sour cream (or plain Greek yogurt if you prefer)
fresh tomato
fresh dark leafy greens of your choice
few shakes of paprika
S & P to taste
The Process:
To make the avocado egg salad, roughly chop up the eggs and add them to a bowl. Add the lightly mashed avocado chunks and the diced dill pickles. Add a tablespoon of sour cream or plain Greek yogurt. Stir these together lightly (be careful not to over-mix it). Add S & P to taste. Sprinkle in the paprika.
Toast the whole wheat buns in the toaster or under the broiler. When the buns are toasted, I added 1 slice of muenster cheese to the buns so it would melt a little bit. Lay some greens on the buns, along with a gorgeous slice of ruby red tomato. Add some S & P to the tomato for extra flavor. Scoop a few spoonfuls of avocado egg salad to one side of the bun, and get ready to eat a yummy, healthy sandwich that will keep you full until dinner!
