I LOVE meals like this one - meals that include a few ingredients, are simple to make, and have a ton of great flavor. This meal is not so much a recipe as it is an "easy weeknight dinner". It was quick to construct and was absolutely nourishing to the body and soul.
It only takes 3 ingredients (and some pantry staples like olive oil, butter, S & P, honey, and cinnamon). As this second pregnancy winds down, and our baby boy gets ready to rock our worlds and change our lives (for the better, of course!), easy dinners like this one are a must.
Enjoy, and Happy Friday!! Weekends are the best, aren't they?
Pork with Spinach & Honey-Cinnamon Apples
Source: my own
Ingredients:
1 black pepper seasoned pork tenderloin
1 bag of fresh spinach (I like alot of spinach!)
3 apples, cored and sliced into wedges (you will have extra to dice up for your oatmeal tomorrow)
olive oil
1 T. butter
S & P
honey
cinnamon
The Process:
Preheat the oven, and then cook the pork tenderloin in a shallow baking dish according to package instructions. Our's cooked for about 30 minutes at 425 degrees. When you have about 10-15 minutes of cooking time left on the pork, warm some butter in a pan. Add the sliced apples, a healthy sprinkle of cinnamon, and add a dash of salt. Cook the apples over a medium heat for about 10 minutes, stirring occasionally. When the pork is cooked, remove it from the oven, and set it aside to rest. Now, you can start the spinach, which only takes a few minutes. Warm a few drizzles of olive oil over medium-high heat in a different pan. Toss the spinach with the olive oil, and add S & P. (You can also add freshly sliced garlic at this point, but I feel like the flavor of the spinach with the simple addition of S & P worked beautifully). Stir the spinach occasionally until wilted and cooked through. Add a drizzle of honey to the apples while they are still cooking, and reduce the heat to low.
Layer slices of pork with a bundle of wilted spinach and the warm, sweet apples. Top with a quick dash of sea salt to bring out all of the flavors. Build your fork with a bite of each to enjoy all of the flavors together!
Nourishing. Simple. Scrumptious.
