Red Rice with Chorizo

One of my dear friends, Susan, gave me a binder of her favorite recipes as a wedding gift in 2010.  We worked together in the schools, and she was such a constant source of positivity and laughter each day.  And, we always loved to talk about food and share recipes!

This Red Rice with Chorizo recipe is one that deserves a recipe card written in permanent marker.  It is scrumptious, and I literally have to resist myself from meandering into the kitchen, walking over to the stovetop, and scooping heaping ladlefuls into my bowl A SECOND TIME.   It is just that good.  Hubby is pretty obsessed with this dish, as well.

The comfort brought forth from the rice, the zing from the salsa, the textures from the corn, the salty-crispy bites of sausage. . .  this dish is a one-pot meal that is easy to put together and super soul-satisfying.  Thank you, Susan!  Enjoy.

Red Rice with Chorizo
Recipe:  Susan W.

The Ingredients:
1 T veg or olive oil
8 oz. chorizo sausage, sliced 1/4" thickness (look for low-fat chorizo!)
1 1/2 cups long-grain white rice (I have also used brown rice)
1 1/2 cups salsa (any kind you like)
2 cups frozen corn, cooked as directed
1/2 cup chopped fresh cilantro *optional
grated sharp cheddar cheese *optional

The Process:
In a big ol' saucepan, heat the oil over medium heat.  Add the chorizo and cook, stirring occasionally, until browned on all sides, about 4-5 minutes.  Add the dry rice to the pan, and stir together with the sausage briefly.  Stir in 1 1/2 cups water, as well as the salsa, and bring this to a boil, stirring a few times.  Cover the pot, and simmer on low heat for 20 minutes.  (wine time).  The rice will cook and absorb all of those fantastic flavors.

Remove the lid from the pan, and fluff the rice with a fork.  Stir in the cooked corn and cilantro.  Heat about 2 minutes more.  Remove from heat and let stand for about 5 minutes.

Now, add a little grated cheddar cheese on top, if you prefer, and get ready for one of the most delicious one-pot meals you will ever make!  As I am typing this, I literally want to scoop out a big spoonful through the computer screen.

Happy December.
It's the most wonderful time of the year.
