Under the Sea, Part 2

I am lucky to say that blending in with hubby's family was always easy.  They love to laugh, celebrate, tell stories, and enjoy good food together - all of the things that make life so grand.

Hubby's dad, who I call "D2" (Dad 2), is quite savvy in the kitchen.  The absolute best thing about his savviness?  He has no idea how or why he is such a good cook.  He just is.

My heart was taken by D2 the first time he made me crabcakes.  He makes them differently every single time, and he can't pinpoint why or how he makes them the way he does; he does not measure, he does not replicate, he does not stress.

And, it's a beautiful thing.

Beautiful S2 (hubby's sister) deserves credit for the addition of dill in the mixture because when the dill is added, the flavors really pop.  The herb marries perfectly with the crab and helps to bring all of the crabcake's flavors to fruition.

It doesn't stop at the crabcakes . . . A few weeks ago, I enjoyed a simple fish dish with a D2-created topping.  He did share with me how this specific topping was created this particular evening, although he made sure I was aware that "it's different each time".  We used tilapia that night, but the topping is universal and will work with just about any fish (chicken would be great, too)!

Stir together some warmed butter, about 1/2 cup of breadcrumbs, a bit of diced onion, a little diced fresh tomato, and S & P.  Spoon over the fish, and bake in a 375 degree oven for 18-20 minutes.  Absolute perfection!!

Thanks, D2, for allowing me to jump in the boat with you and enjoy some of your seafood dishes.

One day, I will get the crabcake recipe . . .  :-)

My family and hubby's family decided to erase the word "in-law" from spoken and unspoken vocabulary the day we got married.  It just seemed rigid, and we decided to embrace every little positive thing about merging 2 families together and get rid of all of those silly "rules".
