Tasty Tomato Stack

Recently, we savored every juicy bite of this Tasty Tomato Stack for dinner.  It was spectacular and definitely jazzed up having salad for dinner by the cool presentation it bestows and the mix of  crunchy and smooth textures colliding together in your mouth.  I recommend making it very soon as tomatoes are extra juicy and flavorful this time of year.

Bon Appetit!

Ingredients (for 2 servings):
2 large red tomatoes, sliced into 1/2" slices
1 large green tomato, sliced into 1/2" slices
1/2 avocado, sliced lengthwise
2-3 pieces of bacon, cooked
1 ear of corn, roasted (see below) or grilled
buttermilk ranch dressing
Fresh basil, for garnish and flavor
S & P

The Process:
Fry up the bacon and set aside.  Prepare the corn by either grilling it on the outdoor grill or roasting it in the oven.  I stumbled upon "oven-roasted corn" while watching Tyler Florence on the Food Network one day, and I have made it this way so many times since!! To roast corn in the oven, simply place the corn (husk ON) directly on the rack of a preheated 350 degree oven for 30 minutes.  Remove it, let it cool a bit, shuck it, and slice the corn off of the cob.  It is as easy as pie and has a succulent, sweet flavor that is unforgettable.

Now, it is time to assemble your Tasty Tomato Stack.  Make sure your tomatoes are roughly the same size since they will be nesting in a tower formation on top of one another.  It is a bit of a sexy salad.  :-)  Alternate layers of red and green tomato slices on each plate.  Add a little avocado every 2 tomato slices or so.

Now, decorate the tomato stack with crumbled bacon pieces and roasted corn kernels.   You will probably have some corn left over; save it for salads or a salsa.  Drizzle with Buttermilk Ranch Dressing, and add some freshly cracked pepper and salt, to taste.  Top with a few leaves of fresh basil.

There you have it ~ the perfect, fresh summer supper.

Also, it is very important on this August 7th day to wish my dear, amazing brother and fabulous, beautiful sister-in-law a Happy 2 Year Anniversary!

You both inspire me, not only by your love for each other, but also by your exceptional cooking.

Much love always.
