BBQ Chicken with Pineapple and Bacon

One of my favorite pizzas is a ham and pineapple pizza.  Hubby's least favorite pizza is a ham and pineapple pizza.  (Yin and Yang - it's a beautiful thing).

I so enjoy the sweet & salty flavor combination of a ham and pineapple pizza. The way the cheese melts into the chewy, salty bites of ham is miraculous, and the pineapple brings a surprising burst of sweetness.  Mmm, delicious.

Anyway, this recipe was crafted from those flavors.  And, hubby loved it.

BBQ Chicken with Pineapple and Bacon

Ingredients (serves 2):
2 boneless, skinless chicken breasts
4 rings/slices of pineapple, canned or fresh
2 pieces of bacon, cooked
your favorite BBQ sauce
palmful of fresh cilantro, roughly chopped
grilled corn (as a side option)
S & P to taste

The Process:
Prep the chicken breasts by adding a little salt and pepper right before grilling.  On your outdoor grill, grill the chicken until fully cooked.  Brush BBQ sauce on the top of the chicken when it has finished cooking and is still warm.

Assemble your meal SIMPLY by placing the chicken on a plate, adding the pineapple and bacon on top, and then finishing with fresh cilantro.  Served with an ear of fresh corn, and you have a bright, flavorful, simple, warmer-weather dinner.  Voila!

Next time I make this, I will grill the pineapple, as well as the chicken, to add another dimension of flavor.  You can also simply bake the chicken in the oven with the BBQ sauce on top, and then add the pineapple, bacon, and cilantro after it comes out of the oven.  It would be just as delicious this way.

Crispy bites of bacon, sweet pineapple, and soul-satisfying BBQ chicken - it is really heaven on a plate, in my opinion.

happy weekend.
