Hearty Breakfast Nachos

I read somewhere in media-land that when President Obama wakes up, this dish is one of his favorite breakfast meals.  I love the idea of turning nachos into breakfast, and I love our President, so I thought ...  “it’s a win-win!”

The key is making your own tortilla chips.  If you used store-bought ones, they would be way too crispy and somewhat lackluster. One of the most beautiful things about this dish is how the tortillas are a little chewy.  The textures and flavors are beyond amazing, and this recipe took just minutes to prepare.

Enjoy!

Hearty Breakfast Nachos
Source: inspired by President Obama's personal White House chef

Ingredients (serves 2):
3 soft flour tortillas, cut into small wedges (like a pizza)
3 eggs
½ avocado, diced
½ cup (or more if desired) of your favorite salsa
Palmful of your favorite grated or shredded cheese (we used white cheddar)
Olive oil and/or butter
S & P
2-3 T Plain Greek Yogurt or Sour Cream (optional)
Hot sauce (optional)

The Process:
Prepare your tortilla chips by first heating up a skillet with a few drizzles of olive oil and then popping them into the pan on medium-high.  Flip occasionally, and cook the chips for about 5 minutes until they are crispy but not burned.  Set the chips aside on paper towels, and add a bit of salt to the chips.

In a pan over medium-low heat, add a little tiny bit of olive oil or butter.  Crack the eggs into a bowl, whisk them together with a dash of water or milk, and add the eggs to the pan.  Scramble them softly.  Add the cheese to the eggs when they are almost finished cooking.

After the eggs are ready, turn the heat off (avoid overcooking!).  Sprinkle some S & P on the eggs.

Assemble your Hearty Breakfast Nachos quickly because you want the eggs to stay warm!  Start by placing some tortilla chips on a plate, scooping some soft-scrambled eggs on there, adding some salsa, and then finally, the avocado.  Hot sauce is optional- but preferred by Hubby.  A dollop of plain Greek yogurt is optional- but preferred by me.

This dish is so wonderful.  You can savor the bites with a fork, or if you are sitting on the couch on a Saturday morning with your hubby over coffee and the morning news, you can pretty much just dig in with your hands. J  It would also be AMAZING for dinner. You could add in some Italian sausage, black beans, and diced onion for extra pizazz.

It marries together with a Bloody Mary like a dream.  It is also fantastic with coffee and O.J.

 Bon Appétit!
