Let us celebrate with wine and sweet words.
~Plautus~
This is one of my favorite, cherished quotes. These words are posted in my kitchen, and I read them often. This quote reminds me of mindfulness, happiness, and family.
My family came in this past weekend, and we all celebrated just being together. Words were sweet, laughter was contagious, and wine was flowing. It was a special weekend. Johnny and Rachel drove down from NY, and we are all just bubbling over with excitement that, after 4 years in CA, they have shifted their roots East to begin blossoming on this side of the country, closer to all of us. We are so lucky.
Today, I want to post a recipe that takes just minutes to prepare so that the rest of the time can be spent celebrating with wine and sweet words.
I was inspired to make this based on a few similar recipes I had seen floating around the internet. One in particular is given credit below. I put a C & C twist on it by adding bright, luscious mango and changing up the greens.
There is something delightful to me about seafood merging with Mexican-style dishes. It just works. They do not feel as heavy, and the flavors are always bright, happy, and phenomenal.
I hope that you enjoy this recipe, enjoy your family, and friends, and celebrate every single moment as a gift.
Shrimp Tacos with Cilantro-Lime Yogurt & Mango
Recipe: inspired by a recipe found here --> www.cleananddelicious.com
Ingredients:
pre-cooked shrimp (however many you would like!)
soft corn or flour tortillas
1 container non-fat plain Greek yogurt
Greens of your choice (arugula, kale, spinach - all smart choices)
3-4 tablespoons fresh cilantro, roughly chopped
1 mango, cut into small chunks
1 tsp. cumin
1/2 tsp. cayenne pepper
juice of 1 lime
S & P
The Process:
Stir together the yogurt with the cilantro in a small bowl. Add the juice of 1/2 of the lime (save the other half for the finished tacos). Add the cumin and a bit of S & P. Stir everything together, and set this aside.
Add a little olive oil to a pan, and turn the stove top to medium-high. Once the oil is heated (about 1 minute), add the shrimp and the cayenne pepper. Toss the shrimp to coat in the olive oil and spicy pepper for about 30-45 seconds, and then turn the heat off. Since the shrimp are pre-cooked, this just jazzes them up a bit. Set the shrimp aside, and then roughly chop them.
Assemble your tacos by first spreading a little cilantro-lime yogurt on the tortilla. Next, add in a scoop of shrimp, a few pieces of mango, and the greens. Squeeze a bit of fresh lime juice on top, and you are ready for a flavorful, quick, and celebratory dinner.
We made these tacos before seeing The Zac Brown Band last weekend. After the show, we realized that there were leftovers in the fridge, and since dinner was 6 hours prior, it was definitely time to eat again. :-) So, of course, we decided to make a little taco snack since they were so darn good.
The mango is what makes this recipe pop. The fruit's complex sweetness marries beautifully with the spicy shrimp. The cilantro-lime yogurt sauce helps bind the taco together in a creamy-but-healthy way. The yogurt also helps to balance everything out so that everyone is friendly, and no one dominates the conversation. The greens add texture and crunch. Oh, it's just beautiful.
Bon Appetit!
I seriously want to eat everything you make.
